Besides ice and beverages, what else can we do with mint? After Pinteresting a bit, I found lots of pairing of mint and chocolate so I geared my search towards chocolate dessert with a hint of mint. I found this really simple and healthy recipe for chocolate mousse from Kids Food Universe and modified the ingredients accordingly to what we have in the kitchen. You will need: (makes about 360ml)
1 riped avocado
1 riped banana
1 tablespoon unsweetened cocoa powder
1/4 cup milk
About 2 fresh mint stalks
1. Cut up the fruits and place all ingredients in the blender. Save some mint leaves for garnish.
2. Blend until smooth. You may add more milk if you would like to thinner consistency.
3. Garnish with mint leaves and chill before serving
