I am back to making lots of fruits and veg purées in an attempt to provide healthier snack options for C and myself. I freeze the purée and add a block to my mornings oats and yoghurt, sometimes eating them as they are for a refreshing snack in the afternoon. So for eating Letter C, there are tons of choices: carrot, cheese, cream, cauliflower, couscous, chicken, chocolate (our all time favourite!), crackers, cinnamon, corn, caramel, cookies etc. I decided on carrot because we have one in the fridge! This carrot puree that I am going to share with you also makes an excellent topping that goes well with Chicken and Couscous. There you have it, eating your Cs!
To make Carrot Peach Nutmeg Purée, you will need:
- 1 medium size carrot
- 4 doughnut peaches (or 1 large peach)
- 1 teaspoon nutmeg powder
- Peel and cut the carrot into chunks
- Cut the peach into chunks
- Steam the carrot till soft (steaming of peach is optional)
- Stir in the nutmeg powder
- Portion and freeze!
